Study of Olive Oil Cultivars using PerkinElmer’s AxION® 2 TOF MS for LC-MS and Statistical Analysis
20 Jul 2015The AxION® 2 TOF MS offers a broad array of capabilities designed to simplify and streamline virtually any analytical workflow irrespective of whether your application requires mass accuracy, full spectrum capability, speed, sensitivity, dynamic range, or all of the above. In this study, levels of triacylglycerols and polar compounds in olive oils of known cultivars were determined by LCMS, with results presented in this scientific poster. Polar compound analysis allows for identification of components associated with taste profiles such as bitterness and pungency, important factors in food production.
