This application note demonstrates the determination of nitrogen and protein in milk protein samples using the Dumas combustion method. Isolates and concentrates of milk proteins are commonly found components of infant formulas, dairy based drinks and a number of other food items and the determination of the nitrogen and protein content is a important part in the quality control process.
