Determination of Carbohydrates in Kombucha using HPAE-PAD

In this video, BeiBei Huang, PhD, presents her poster ‘Determination of Carbohydrates in Kombucha’. In the study, HPAE-PAD was used to detect levels of carbohydrates such as sucrose, fructose and glucose in Kombucha, a fermented tea drink which is reported as having blood-sugar regulating properties. Derivatization of the carbohydrates was not required as the method allowed for direct detection, cutting down on sample preparation time. A Thermo Scientific™ Dionex™ CarboPac™ PA20 IC Column was used to separate the carbohydrates.
