Dumas, an approved technology for nitrogen analysis in milk and milk products
4 Aug 2020This application note compares the two current international standards for determining nitrogen and total protein in milk and milk products, Kjeldahl via ISO 8968-1 (AOAC 991.20) and Dumas via ISO 14891. It is demonstrated that while both methods provide comparable results, there are significant cost savings and reduced waste using the Dumas technique, suggesting it is the method of choice for nitrogen analysis in dairy products.
