Dry Matter Content of Egg Products Using Refractometry

This application describes an alternative to the sea sand method used to measure the dry matter content of egg products, which is an important parameter for assessing and evaluating the quality of the product. Results show refractometry, using the Brix scale along with instruments in the DR6000-T series, is a faster method.
