Analysis of Organic Acids and Anions in Fermentation Broth
16 Sept 2012In this poster a simple and rapid capillary electrophoresis method for the determination of anions and organic acids in fermentation broth, using the Anion Analysis kit from Beckman Coulter, is described. This method utilizes a dynamic capillary coating and indirect UV detection to provide resolution of 4 anions and 11 organic acids that contribute to overall product quality in beer. Both final product and in-process beer samples were evaluated for anions and organic acids.

Capillary ElectrophoresisCapillary electrophoresis (CE) is used to separate molecules based on charge, size and hydrophobicity. Pressure, voltage or a vacuum is used to introduce the sample to fused silica capillaries. Fluorescence, UV/Vis, UV or diode array detectors are used to visualize components. Types of CE systems include capillary electrochromatography (CEC), capillary zone electrophoresis and capillary gel electrophoresis. Biological materials used include cells, enzymes and organisms. Usually bioprocessing requires a batch or continuous bioreactor such as a fermentor or cell culture system. The advantages of using a reactor include high productivity, easy configuration, adjustable values and automation.BeerOrganic Acids
