Determining the rheological behavior of sucrose solution using the BeNano 180 Zeta

In this application note, the BeNano 180 Zeta nanoparticle size and zeta potential analyzer from Bettersize Instruments was employed to analyze sucrose samples at various concentrations. The study aimed to characterize the viscoelastic properties of the solutions using dynamic light scattering microrheology (DLS microrheology). This technique utilizes dynamic light scattering to measure the mean square displacements of inert tracer particles added to a solution, providing valuable rheological information about weakly structured polymer and protein solutions, as well as gel systems, where tracer particles diffuse over significant distances.
